Tacos: Cauliflower Red Onion

YIELD 6 servings

INGREDIENTS

STEAMER:
1/2 half medium cauliflower, broken or cut into florets
1 cup roughly chopped red onion

BOWL (whisked together):
1 to 2 garlic cloves, minced
1 to 2 tbsp capers, drained and rinsed
3 tbsp white wine vinegar (or Champagne vinegar or sherry vinegar)
2 tbsp extra virgin olive oil
Salt and freshly ground pepper
1/4 cup pickled jalapeños, drained and well-chopped (optional)

FIXINGS FOR SOFT TACOS:
6-inch soft corn tortillas
cotija or ranchero cheese, grated
chopped cilantro

PREPARATION

1. Rinse STEAMER contents; drain.

2. Place STEAMER over 1 inch of boiling water. Cover and steam until tender, stirring as needed — 8 to 10 minutes; set aside to cool a bit.

3. Toss STEAMER into BOWL. Season with more salt and pepper, if needed.

4. Marinate, stirring from time to time, for 30 minutes or more.

TO SERVE IN SOFT TACOS Warm the tortillas (two at a time on a plate, cover with damp towel, 30 seconds or so on HIGH in the microwave). Top with cauliflower mixture and a handful of cheese and cilantro.

NOTE Do not store in plastic.
